Roasted Acorn Squash Stuffed with Mushrooms and Sage


This recipe was one of my favorites from Detox Week. The key is fresh sage! The flavors get me ready for Fall. And after living in Maui for a year, I can say I’m truly ready for the raindrops on windows, tall boots and curling up in front of a fire with my Loves.

Acorn squash is a dark green Winter squash and you should start to see it now (Sept.) at your local farmer’s market and grocery stores. It is high in fiber and potassium. This recipe is fantastic, let me know what you think!
