Lena’s Treats // Chocolate Peanut Butter Quinoa Cookies

These little cookies were made for us by J’s Lena (my mom) all. the. time. while we were living under one roof in Maui this past year. We created the perfect living arrangement: she baked, I cooked. Perfetto! She also happened to be our personal barista every morning with homemade cappuccinos ready for us to savor via the Bialetti (these things are great for camping, too!). And, since she learned how to make proper ones in Italy, they were absolutely divine, cream and all.

Back to the cookies. They are tasty little things, gluten-free (GF) and a healthy alternative to a traditional cookie. Packed with protein, fiber, omega-3s and even antioxidants (if you choose dark chocolate chips), these treats are a great option for kiddos and adults alike. We love these at our house. It took me a few times to get them down, but once I did, they were gone in seconds. My husband and little guy devoured them equally! Let me know what you think and if you come up with any fun modifications (I sometimes add coconut).

    Ok I must know where to find quinoa? cause now I want to make this, they look Deliscious and you said Dark Chocolate! Oh and flaxseed? I’ll go the extra step = )

      They are fabulous really and such a healthy treat. I am always up for J eating these. Try them and let me know what you think! It took me a couple of tries to get them down because my mom usually makes them 🙂
