What can I say? Melissa never ceases to amaze me! If you haven’t subscribed to her blog over at My Whole Food Life, you need to! Who doesn’t love simple, healthy treats and recipes that take minutes to make? The thing I love most about Melissa is she cares about quality ingredients and showing folks how easy it is to ditch junk food for whole foods. She never uses processed sugars or refined products and she’s always coming up with creative recipes that blow our tastebuds out of the water.
I am so glad Melissa came out with her own cookbook and excited to be able to give one away. I really think her book would make the perfect Mother’s Day, Valentine’s Day, Christmas or even birthday gift. The cookbook itself is compact and full of colorful pictures and easy-to-follow recipes and truly fabulous for anyone starting out their whole foods journey or those who have been at it for awhile. They’re so good, we made 15 yesterday and they were all gone before noon today. đŸ˜‰
No Bake Cookie Dough Balls

- 1 cup (100 g) gluten-free oats
- 10 Medjool dates, pits removed
- 1 cup (240 g) macadamia nut butter
- 1 teaspoon ground vanilla beans
- 2 tablespoons water
- ½ cup (80 g) dark chocolate chips
- Blend the oats in a food processor until they are coarsely ground. This takes about 2 minutes.
- Add the dates, macadamia nut butter, vanilla, and water. Pulse until a dough starts to form, 2 to 3 minutes.
- Fold the chocolate chips into the dough, or use them in the next step to coat the outside of the balls.
- Roll the dough into bite-size balls. If you’re covering them with chocoÂlate chips, roll the balls around on a plate of chocolate chips and then gently press the chips in.
- Place the balls on a parchment-lined baking sheet. Stick the baking sheet into the fridge so that the balls can firm up, about 30 minutes.
- Store the cookie dough balls in the refrigerator for up to 2 weeks, or in the freezer for up to 6 months.
- If you want to bump up the protein in this recipe, add 2 tablespoons of chia seeds, hemp seeds, or leftover nut milk pulp (see How to Use Nut Pulp, page 57).
- PREP AND CHILL TIME: About 40 minutes
- Makes fifteen 1-inch (2.5 cm) balls

I want to try any recipes that use coconut or coconut oil.
My favorite recipe so far would probably be the three ingredient peanut butter cookies. So good and you’d never know all the other stuff was missing. I plan to make her Reese’s peanut butter cups this weekend. I also love the peanut noodle stir fry.
The Reese’s PB cups are my fave!! I add a little fleur de sel on top, oh my word!
