Best. Coffee. Ever.?
When the whole butter in your coffee thing came out I thought, “Say what? Butter in your coffee?” And then I thought, “More fat intake, score!” I’m all about the fat intake from grass-fed + pasture-raised animals. So, I gave it a try. It wasn’t my cup of…tea? But, I gave it a few tweaks and it became my most beloved cup of coffee EVER.
I found myself drinking this fueled up coffee for breakfast a few times out of the week and always felt filled up and focused. The Great Lakes Gelatin powder and quality fat is where it’s at for this recipe. Gelatin?? Yep! Great Lakes Gelatin powder is collagen in powder form and has all of the anti-aging benefits to boot, plus it has about 5.5g of protein for every tablespoon. I can’t say enough about gelatin powder. I put it in everything: smoothies, coffee (obviously), soup, protein shakes. It’s a whole food, so instead of buying my former processed protein powder, I now buy Great Lakes Gelatin powder instead. This recipe also contains good quality fat. Fat is good for the brain, no? These fats are also anti-inflammatory.
I’ve never been into drinking liquid for breakfast or weird food fads that come and go, but I have to say the high fat content and protein along with a bit real maple in this recipe gives you enough caloric intake to keep you fueled up for breakfast and it sets you up for burning fat all day! I love waking up to my morning cup of frothy, brain-powered, fat-burning goodness.
Give this recipe a try and tweak it to your heart’s content if you want, but don’t be shy about putting butter and/or coconut oil in your coffee. It’s awesome. This is especially great for those of you who skip breakfast (you know that’s horrible for your blood sugar, right? ;)). If you need food to go with your coffee, eat food along with it! Make it your own thing. You can also choose to use cold-pressed, organic decaf (as I choose to do) if you cannot tolerate the caffeine or you are going through a healing diet like GAPS and some folks even choose to use tea if that suits your fancy (maybe just leave out the raw cacao?)!

Grass-Fed Butter: Contains Vit. A & E, iodine and selenium (good for thyroid), beta-carotene, anti-inflammatory fatty acid: butyrate, which supports metabolism and insulin sensitivity, Vit K2 needed to activate Vit A & D, medium-chain fatty acid lauric acid, which is antimicrobial in nature and CLA conjugated linoleic acid, which is anti-inflammatory and helps hinder mammary, colon and skin cancer growth.
Coconut Oil: Anti-inflammatory in nature. Good for brain health, increased energy and metabolism production contributing to weight loss over time, contains the medium-chain fatty acid lauric acid, which is antimicrobial, keeps candida in check, kills Staph and is good for overall gut health, improves blood cholesterol and is incredible for your hair, skin and nails.
Great Lakes Gelatin Powder: Natural form of collagen that supports age related collagen and connective tissue loss. Contains amino acids that promote the quick reproduction of blood cells for healing, especially in bones and joints. Good for hair, skin, nails, joints, gut health and used as an anti-aging product.
Raw Cacao: Contains flavanoids, which are a type of antioxidants that prevent disease and promote general health. Antioxidants stabilize and destroy free radicals in the body, a build up of free radicals can lead to heart disease and cancer. Real Maple Syrup: I use just enough to cut the bitterness + real maple has some health value. Real maple syrup (grade B is best) contains 24 antioxidants and minerals calcium, potassium, iron, zinc, and manganese.

- 1 cup of organic brewed coffee
- 1 Tbs. grass-fed Kerrygold butter or coconut cream if you cannot do dairy
- 1 Tbs. coconut oil
- 2 tsp. raw cacao
- 1 Tbs. Great Lakes Gelatin Powder (green can)
- 3/4th tsp. maple syrup (more or less if you like)
- Dash of cinnamon or cardamom and vanilla (optional)
- Add hot coffee + all ingredients in a blender and blend for 30 seconds. Voila! Frothy, fat-burning, brain fueling goodness. Enjoy!
- Non grass-fed animal sources do not have the same nutrition profile and will have a higher omega-6 to 3 ratio, which is not a good thing. Make sure you look for grass-fed butter like Kerrygold to avoid this and ensure you're not ingesting chemicals and antibiotics as well.
- When starting something like this, your body may need time to adjust due to the high fat content. It is the same for folks when they start the GAPS diet for gut healing, most of us are used to high carbs, not high fat.

Do you have access to Amazon by chance? I get my gelatin there and you could definitely just use coconut oil and tea instead of coffee. I hear chia is great.
That sounds like it will be the best coffee ever. I love the idea of adding coconut oil and raw cacao. My hubbie loooves his coffee so I am pretty sure he will love this one 🙂 Pinned!

Hey, Emily! Thanks. If you’re a tea drinker, I’ve heard folks really dig this with chai tea or other kinds of tea as well.
Hubs using MCT oil instead of coconut oil but this recipe looks similar to what he drinks. He loves it.

Absolutely!! In fact, I am doing the same right now when I drink it! It might not have the creamy taste we all love unfortunately, but totally works!
