Double Dark Chocolate Mint RawBites

These make a great snack or healthified dessert. These little balls are high in antioxidants with the use of raw cacao, dark chocolate chips, walnuts, almonds and dates, they contain no refined sugars and will definitely satisfy any mint fettish. 😉

Ingredients
  1. 1 cup pitted, medjool dates
  2. 1 cup walnuts
  3. 1 cup almonds
  4. 1/2 cup dark chocolate chips
  5. 2 tsp. raw cacao powder
  6. 2 tsp. of Great Lakes gelatin powder (for extra nutrients, you can omit this if you don't have it)
  7. 1 tsp. peppermint extract or 3 drops YL Peppermint essential oil
  8. Pinch of fleur de sel
Instructions
  1. In a food processor, mix the nuts, dates and chocolate chips until they look like finely chopped crumbs.
  2. Add in the cacao powder, gelatin powder and peppermint extract, pulse until combined.
  3. Add a pinch of fleur de sel (flaky sea salt), pulse a few more times.
  4. You can skip this step, but I add a handful of chocolate chips at this point to give them some chunky pieces. Add your chips and pulse.
  5. Roll into balls. You can make them big or small!
  6. Enjoy!

I buy my org. medjool dates in bulk here. You can also find them in bulk on Amazon below. Costco sells nuts and Fair Trade chocolate chips in bulk as well, although not organic and Trader Joes sells peppermint extract seasonally and you can get your Young Living essential oils here. If you do get the gelatin powder (which is a great, whole food protein powder replacement and can be mixed in coffee, soups, smoothies, etc.) get the green can! The reddish can gels and you will have clumps. I love this stuff and put it in everything, so good for you. Below are ingredients used in this recipe that you can find on Amazon, some even in bulk.

 

Fun, Nutrition Info

Dates = high in fiber, low on the glycemic index and full of flavanoids and tannins and Vit. A (antioxidants), iron, potassium, manganese, calcium Vit. K and B vitamins.

Nuts = protein, fiber, good fats, Vit E (antioxidant in almonds), Omega-3s (essential fatty acids found in walnuts, anti-inflammatory and good for brain and mood)

Gelatin = form of collagen, good for hair, skin, nails and joints and anti-aging

Raw Cacao/Dark Chocolate = high in antioxidants that fight free radicals in our body and keep our cells healthy and from becoming abnormal (think cancer)

  • I love medjool dates and the flavor of these sounds really fun. Also, I haven’t seen gelatin used in raw bites before, probably because so many of them are vegan recipes; I like that addition!

    Any ideas to make these without nuts, my son is allergic. Pumpkins seeds or any other good substitutes?

    • You could definitely try seeds! Let us know how it goes as a lot of folks do have nut allergies.
