Hey, All. I whipped this together this evening and had to share. It took me minutes to put together and you can tweak it to your heart’s content. {Gluten-Free, No Refined Sugar}
Freshly Grown’s GF Apple Pear Crisp
3 apples
2 pears
1/4th c. coconut sugar or brown sugar
2 Tbs. all-purpose GF flour (optional)
1/2 tsp. lemon zest
1 Tbs. fresh lemon juice
1/2 tsp. cinnamon
1/2 tsp. nutmeg
(or you can even use 1 tsp. of pumpkin pie spice)
Topping
1 1/4 c. pecans or nut of your choice
1/2 c. old-fashioned oats
1/4th c. maple syrup or raw honey
3 1/2 Tbs. coconut oil, melted
Pinch of sea salt
Preheat your oven to 350 Core, cut and peel (I keep my peels on) your apples and pears. Cut them into medium-sized chunks. Throw them in a bowl and add your lemon zest, juice, coconut sugar, GF flour and spices. Mix thoroughly. Pour your apple-pear mixture into a deep dish baking round. Then, with a food processor, process your pecans until they are ground. You can pulse them if you like them a bit chunky. Add a bit of your 3 Tbs. of coconut oil as you process the pecans. You can use the same mixing bowl as your apple-pear mixture and add all of your topping ingredients (including your ground pecans) to the bowl and stir or blend with a hand mixer until well mixed. Pour onto the top of your apple-pear mixture and place your baking dish in the oven. Bake for 50-60 minutes until your crisp cooked through and bubbly. Easy as…pie?
Two things: 1. Cut your apples and pears any size you like. I’ll probably cut my chunks smaller next time 2. I don’t have a big sweet tooth and sugar is still sugar so if you wanted to cut the coconut sugar and maple syrup amount in half I bet you’d still walk away with a treat that’s still plenty sweet.
