One of my best friends, Tina, is in town for a whole month and I am (of course) so excited. She’s into health and juicing, too, which makes it even more fun. Last night she came over for a girl’s night and stayed over with us. First thing she wanted to do when we all woke up? Juice. That’s my girl! Tina even brought over her own little bag of produce she picked up at a local stand. I threw in what I had from my weekly juicing box I get from Organics to You and she threw in what she had from her farm stand. What did we come up with? Rainbow Swiss!

Rainbow Swiss

Makes close to 32 oz. depending on how big all of your produce is

  • 2 Red Rainbow Swiss chard leaves

  • 4 Yellow Rainbow Swiss chard leaves
  • 4 Large kale stalks
  • 8 Carrots, tops chopped off (don’t juice carrot tops, toxic)
  • 1 Beetroot, peeled and chopped
  • 1 Apple or 2 small apples, de-seeded
  • 1 lime, peeled
  • 2 inch piece of ginger, peeled

Go organic, why juice pesticides! Wash all produce. Then, prep. Cut beet ends, carrot tops, de-seed apples and peel oranges, limes and ginger. Send all produce through your juicer. Drink quickly (due to oxidation) and enjoy!

Cool Nutrition Stuff

Swiss Chard = an excellent source of calcium, so it’s good for your bones, high in antioxidants, which include beta-carotene, lutein, vitamin E, vitamin C and many more, high in iron, which is good for the blood and circulation, regulates blood sugar and it’s excellent for hair (Biotin) and eyes (Lutein). Go Swiss!

Everyone always asks me what juicer I use. This is my juicer of choice. I’ve had it for almost 3 years and love it!
