5-Minute Classic Hummus

I used to work at a Lebanese restaurant and there was nothing like the fresh, puffy pita bread dipped in creamy hummus. This is an easy, classic hummus recipe loaded with tahini and ready to eat by itself or as a base for creating other hummus flavors like this one. If you’ve never tried tahini, it’s fabulous. Tahini is ground sesame seeds made into a nut butter, similar to peanut butter. It is great spread on toast with honey and makes a fantastic vegan salad dressing. You can find tahini here.

Tahini is a great source of B Vitamins and Vitamin E. B vits promote healthy cell growth and increase the rate of metabolism and Vitamin E is an antioxidant that repairs damage cells, protects against cardiovascular disease and is great for your skin. Hummus overall is full of fiber, healthy fats, folic acid, manganese, zinc, magnesium, copper, iron, and protein. The combination of protein and fiber will keep you feeling full longer. Eat up! 

5-Minute Classic Hummus

Ingredients

15 oz. garbanzo beans, if using canned, rinse and drain well

3 TB fresh lemon juice

1/4 cup tahini

1 tsp. cumin

2 garlic cloves, minced and mixed with 1/2 tsp. salt to make a paste (this cuts the sharpness of the garlic if eating right away. You could also use roasted garlic.)

3 TB water

2 TB olive oil

More salt to taste (approx. another 1/2 tsp. salt)

Garnish with olive oil, paprika, and chopped parsley.

Directions

In a food processor, blend together garbanzo beans, lemon juice, tahini, cumin, garlic paste and water until you get the desired consistency you prefer. As the food processor is going, add in olive oil to emulsify. Add more salt to taste. Pulse a few more times.  Serve and garnish with olive oil, paprika and parsley!
