Sweet Potato & Carrot Curry-Cumin Fries

Curry-Cumin Sweet Potato + Carrot 'Fries' | Freshly Grown

  • 2 sweet potatoes, peeled and sliced into wedges or fries

  • 2-3 carrots, peeled and sliced into wedges or fries

  • 2 Tbs. coconut oil (enough to coat sw. potatoes + carrots)

  • 1 tsp. curry powder

  • 1 tsp. cumin

  • Sea salt + fresh ground pepper

Preheat oven to 425°. Wash, peel and cut sweet potatoes + carrots into the desired shape of your choice. You can cut them into wedges or long fries or even cubes for a roasted side dish. Toss the carrots and sw. potatoes in a big bowl with melted coconut oil (enough to coat both veggies) + curry powder + cumin. Grind a bit of sea salt and pepper to taste. Toss again. Lay them all out on a big baking sheet and bake for 30 minutes or until cooked through. Once I cook them for half an hour, I like to broil the tops on low for a couple of minutes to give them some crisp, just watch ’em so they don’t burn! These are awesome and always a crowd pleaser. Give them a go.

Carrots and sweet potatoes contain Vitamin A, which is important in skin and eye health, in immunity boosting and warding off infections. They are also both rich in the mineral potassium, which is good for the heart, helps control blood pressure, carries oxygen to the brain and may even prevent kidney stones. Eat up and enjoy!
