My friend B and her family came over the other night for dinner and afterward our kiddos got to carve their pumpkins. Good times all around!
She took the seeds home to roast and made a simple recipe on the fly. The result: garlicky goodness in the form of a healthy snack (yes, grass-fed butter is healthy! ;)). Here’s her easy recipe.
B’s Garlic Roasted Pumpkin Seeds
Rinse 2 cups of raw pumpkin seeds
Toss with melted grass-fed butter or coconut oil in a bowl, enough to coat
Sprinkle seasoned salt + garlic powder to taste, about 1/2 tsp. of each
Bake on 250° for an hour, stirring a couple of times as they cook, then increase to 350° for about 10 min. or until they are crisp
Take out of the oven and let them cool
Shake a bit more sea salt if necessary
Voila! B’s Garlic Roasted Pumpkin Seeds
