B’s Garlic Roasted Pumpkin Seeds

My friend B and her family came over the other night for dinner and afterward our kiddos got to carve their pumpkins. Good times all around!

She took the seeds home to roast and made a simple recipe on the fly. The result: garlicky goodness in the form of a healthy snack (yes, grass-fed butter is healthy! ;)). Here’s her easy recipe.

B’s Garlic Roasted Pumpkin Seeds

Rinse 2 cups of raw pumpkin seeds

Toss with melted grass-fed butter or coconut oil in a bowl, enough to coat

Sprinkle seasoned salt + garlic powder to taste, about 1/2 tsp. of each

Bake on 250° for an hour, stirring a couple of times as they cook, then increase to 350° for about 10 min. or until they are crisp

Take out of the oven and let them cool

Shake a bit more sea salt if necessary

Voila! B’s Garlic Roasted Pumpkin Seeds

Cool Nutrition Stuff

Pumpkin seeds are rich in magnesium, zinc, Omega-3s, phytoestrogens (great for menopause), antioxidants and they are anti-inflammatory. Eat up!

I carved a pumpkin and made pumpkin seeds the other day… I forgot how much I loved them! I’m going to carve another and do half sweet and half salty (and try this garlic seasoning you did)!

Good idea! I know, I love the sweet ones, too. What do you do for sweet seeds?

  • I am passionate about pumpkins this season.

I carved up a pumpkin and made pumpkin seed milk, pumpkin smoothies and pumpkin soup this week.
