I made this last night for a BBQ and it was a hit. The best part, it took me maybe 5 minutes to make.
Quick Refreshing Fruit Salad
- Apricots, peaches or nectarines
- Citrus juice: lime, lemon or orange
- Raw honey (optional)
- Chia seeds
Chop as much or as little fruit and mint as you want, mix both in a bowl, then squeeze a bit of citrus of your choice over the fruit, drizzle a little raw honey, sprinkle chia seeds on top and stir everything so it is even throughout. Refrigerate for 30 minutes to let the flavors infuse. That’s it. It’s easy, refreshing and healthy.
*Note: A reader suggested adding some citrus zest as well. Perfect!
