Gluten-Free Caramelized Onion & Tomato Scones

These scones are full of flavor. They are savory with a hint of sweet. Have them in the morning next to an egg or tempeh veg scramble or for a snack topped with Herbed Labney or Sun-Dried Tomato Hummus. Either way, any time of day works to eat these yummy, gluten-free scones.

GF Caramelized Onion & Tomato Scones

  • GF Caramelized Onion & Tomato Scones | Freshly Grown 3 c GF flour blend
  • 1 tsp xanthan gum (or another gum of your choice)
  • 2 Tb baking powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4th c olive oil
  • 1 15 oz can tomato sauce (Eden Organics cans are BPA-free)
  • 1 tsp balsamic vinegar
  • 1 medium onion diced
  • 2 Tb olive oil
  • 1/4th c raw sugar or coconut sugar
  • 2 Tb chopped fresh rosemary

Preheat oven to 375 degrees. Caramelize onion in 2 Tb of olive oil, add rosemary and sugar at the end and dissolve. Set aside to cool. Mix dry ingredients together, mix wet together, combine dry and wet together by hand. Fold in onions. Be careful not to over mix. Form two equal shaped rounds and bake 15-18 until golden brown. Slice and a serve.
