I pretty much couldn’t stop eating these. I love cardamom (must be my Persian roots). I am definitely making pumpkin cardamom ice cream now, I just can’t get enough of these flavors.
Pumpkin Pie Cardamom Seeds
2 cups pumpkin seeds from a real pumpkin, washed and thoroughly dried (make sure they’re dry, this is key!)
2 Tbs. real maple syrup
1 Tbs. coconut oil, melted
1 tsp. pumpkin pie spice
1/2 tsp. cardamom
Pinch of sea salt (optional)
Preheat oven to 375°
Mix all ingredients in a big bowl with your seeds.
Lay the seeds on a big baking sheet and spread them out.
Bake for 20 minutes or until they are lightly browned and a bit crisp.
